RESUMO:
Pulsed-Light is based on the emission of white light rich in UV during short-time (less than 1 ms), but with very high energy. This technology is increasingly used for decontamination of material in contact with foods, or the decontamination of some foods. Spores of bacteria or condiospores of moulds are particularly resistant. This presentation deals with the major factors influencing the resistance of these micro-organisms to pulsed-light and with some the mechanims implicated in pulsed-light inactivation.

Frédéric Carlin is Research Director at INRA in Avignon, France. He develops his research at UMR408 INRA – Université d’Avignon, Sécurité et Qualité des Produits d’Origine Végétale. His main activities deals with ecology, diversity, physiology and control of spore-forming bacteria in foods, and with predictive modelling and risk assesment in foods.
